- ½ cup (115g) unsalted butter, melted and cooled slightly

- ½ cup (120ml) whole milk
- 1 teaspoon vanilla extract
- 1 ½ cups (225g) fresh or frozen blueberries
- 1 tablespoon lemon zest
- 1 tablespoon sugar mixed with a pinch of cinnamon (optional topping)
Instructions
- Preheat oven to 425°F (220°C) and line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar until combined.
- In a medium bowl, whisk the melted butter, eggs, milk, and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients and gently fold together with a spatula until just combined; do not overmix.
- Gently fold in the blueberries (if using frozen, do not thaw them first).
- Divide the batter evenly among the muffin cups, filling them about ¾ full.
- Sprinkle with the optional sugar-cinnamon topping if desired.
- Bake at 425°F for 18-20 minutes, or until tops are golden brown and a toothpick comes out clean.
- Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Do not overmix the batter to ensure tender muffins. If using frozen blueberries, do not thaw them to prevent bleeding. For tall domes, ensure the oven is fully preheated to 425°F and fill liners ¾ full. These muffins can be stored at room temperature for 2 days, refrigerated for 5 days, or frozen for 3 months.
