Instructions

  1. Preheat oven to 350°F (175°C).
  2. Bring a large pot of salted water to a boil. Cook egg noodles until al dente (4-6 minutes). Drain, rinse with cool water, and toss with a tiny bit of oil to prevent sticking.
  3. In a large mixing bowl, whisk together eggs, milk, granulated sugar, vanilla extract, and salt until smooth.
  4. Pour the custard mixture over the cooked noodles and toss gently to coat. If using fresh blueberries, fold them in now.
  5. Grease a 9×13 baking dish. Pour the noodle mixture into the dish and spread evenly. If using frozen blueberries, scatter them on top and press down slightly.
  6. In a small bowl, combine flour, brown sugar, cinnamon, and nuts (if using). Add cold cubed butter and mix with a fork or fingers until the mixture resembles coarse crumbs.
  7. Sprinkle the streusel topping evenly over the noodle mixture.

Notes

Do not overcook the noodles as they will continue to cook in the oven. Use cold butter for the streusel to ensure a crisp texture. If using frozen blueberries, do not thaw them; toss with a little flour to prevent sinking. Let the kugel rest for 10-15 minutes after baking to allow the custard to set for cleaner slices.
