Ingredients
- 1 cup (225g) unsalted butter
- 1 cup packed (220g) light brown sugar
- ½ cup (100g) granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1 ¾ cups (220g) all-purpose flour, sifted
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup (160g) toffee bits
Instructions
- Brown the butter: Melt 1 cup unsalted butter in a medium saucepan over medium heat, stirring constantly until it turns golden amber with a nutty aroma (7-8 minutes). Remove from heat and let cool for a few minutes.
- Mix sugars and eggs: Add 1 cup packed light brown sugar and ½ cup granulated sugar to the browned butter. Whisk until smooth and glossy. Add 2 eggs one at a time, whisking well after each. Stir in 2 teaspoons vanilla extract.
- Combine dry ingredients: In a separate bowl, sift together 1 ¾ cups all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon salt.
- Fold dry ingredients into wet: Slowly add dry ingredients to wet mixture, folding gently with a spatula until just combined. Batter will be thick and shiny.
- Add toffee bits: Fold in 1 cup toffee bits evenly, reserving a few to sprinkle on top.
- Bake: Pour batter into a parchment-lined 9×9 inch baking pan and smooth the top. Sprinkle reserved toffee bits on top. Bake at 350°F (175°C) for 25-30 minutes until edges are golden and a toothpick inserted comes out with a few moist crumbs.
