- 6–7 medium fresh peaches (about 3 lbs / 1.4 kg), peeled and sliced
- ½ cup granulated sugar (100g)
- 1 tablespoon lemon juice (15ml)
- 1 teaspoon ground cinnamon (2g)
- 1 ½ cups all-purpose flour (190g)
- 2 teaspoons baking powder (8g)
- ½ teaspoon salt (3g)
- ½ cup unsalted butter (113g), cold and cubed
- ¼ cup whole milk (60ml)
Instructions
- Preheat oven to 375°F (190°C).
- Peel and slice peaches into ½-inch wedges. Toss with sugar, lemon juice, and cinnamon in a large bowl. Let sit for 15 minutes to macerate.
- In a medium bowl, whisk together flour, baking powder, and salt.
- Cut cold, cubed butter into the flour mixture using a pastry blender or fork until it resembles coarse crumbs with pea-sized butter chunks.
- Pour in milk and stir gently with a spatula until the dough just comes together; do not over-mix.
- Pour the macerated peaches and their juices into a 9×9 inch baking dish.
- Drop spoonfuls of the biscuit dough evenly over the peaches.
- Bake for 35-40 minutes until the topping is deep golden brown and juices are bubbling thickly. Cover with foil if browning too fast.
- Cool for at least 15 minutes before serving to allow juices to thicken.
Notes
Keep butter cold for a flaky topping. Do not thaw frozen peaches before using. Let peaches macerate to create a syrupy base. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven to crisp the topping.
