Chocolate Eclair Poke Cake

  • Author: Natalia
  • Total Time: 1 hour 15 minutes
  • Yield: 12 servings 1x

Description

An easy-to-make, crowd-pleasing dessert that combines chocolate cake, instant pudding, whipped topping, and chocolate frosting for a nostalgic eclair flavor in cake form.

Ingredients

Scale
  • 1 box chocolate cake mix (about 15.25 oz / 432g)
  • Eggs, oil, and water as called for on the cake mix box
  • 1 package instant chocolate pudding mix (about 3.9 oz / 110g)
  • 2 cups milk (480 ml), whole milk preferred
  • 1 tub whipped topping (about 8 oz / 227g), such as Cool Whip
  • 1 can or about 1 cup chocolate frosting (240g)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Prepare cake batter according to box instructions using eggs, oil, and water.
  2. Pour batter into a greased 9×13-inch baking pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  3. Let the cake cool slightly but remain warm enough to poke holes.
  4. Using a fork or skewer, poke holes about 1 inch apart all over the cake, piercing deep enough to reach the bottom.
  5. In a mixing bowl, whisk together instant chocolate pudding mix, milk, and vanilla extract until thickened (about 2 minutes).
  6. Pour the pudding evenly over the warm cake, allowing it to seep into the holes.
  7. Chill the cake in the refrigerator for at least 30 minutes to let the pudding set.
  8. Spread the whipped topping evenly over the chilled cake.
  9. Drizzle or spread chocolate frosting over the whipped topping.
  10. Optional: Chill for another 15 minutes to set the frosting before serving.
  11. Serve chilled.

Notes

Use instant pudding for best results; pour pudding over warm cake to absorb better; poke holes thoroughly to allow pudding to seep in; chill cake for best flavor and texture; optional toppings include chopped nuts, mini chocolate chips, or fresh raspberries; can substitute whipped cream for whipped topping but consume within 1-2 days; do not freeze as pudding and whipped topping separate.
