Instructions

  1. Preheat oven to 425°F (220°C). Prepare biscuit dough according to package instructions or your own recipe and set aside.
  2. Heat a large skillet over medium heat. Add breakfast sausage, breaking it up with a spoon. Cook until browned and crispy in spots, about 7-8 minutes. Drain excess fat, leaving about 2 tablespoons in the pan.
  3. Reduce heat to medium-low. Sprinkle flour evenly over sausage and fat. Stir constantly with a wooden spoon or whisk for about 2 minutes until mixture bubbles and smells nutty.
  4. Slowly pour in whole milk while whisking to prevent lumps. Continue stirring as gravy thickens, about 4-5 minutes, until creamy and smooth.
  5. Season gravy with salt and plenty of freshly ground black pepper. Adjust seasoning and consistency as needed by adding more milk or simmering longer.
  6. Place biscuits on a baking sheet and brush tops with melted butter. Bake for 12-15 minutes until golden brown and puffed.
  7. Split warm biscuits in half and ladle sausage gravy generously over the top. Serve immediately.

Notes

Do not rush browning the sausage to develop flavor. Whisk milk in slowly to avoid lumps. Use whole milk for best texture and richness. Brush biscuits with butter before baking for a golden finish. Taste gravy before adding salt as sausage can be salty. Reheat gravy gently with a splash of milk to restore creaminess. Avoid freezing gravy as it may separate; biscuits freeze better.
