Description

A cozy, dairy-free pumpkin spice latte made with homemade pumpkin syrup. This recipe uses real pumpkin puree and spices for a rich, aromatic flavor without the dairy digestion issues.


Ingredients

  • 1 cup (240g) 100% pure pumpkin puree
  • ½ cup (100g) light brown sugar
  • ¼ cup (60ml) pure maple syrup
  • ½ cup (120ml) water
  • 2 teaspoons pumpkin pie spice
  • ¼ teaspoon salt
  • 2 shots (½ cup / 120ml) espresso or strong coffee
  • 1 cup (240ml) dairy-free milk (oat milk or full-fat coconut milk recommended)
  • Dairy-free whipped cream (optional)
  • Pinch of cinnamon or pumpkin pie spice for garnish

Instructions

  1. In a small saucepan, combine pumpkin puree, brown sugar, maple syrup, water, pumpkin pie spice, and salt. Whisk until smooth.
  2. Place the saucepan over medium heat and bring to a gentle simmer, stirring frequently.
  3. Simmer for 8-10 minutes until the syrup thickens slightly and coats the back of a spoon. Remove from heat and let cool completely.
  4. Brew espresso or strong coffee while the syrup cools.
  5. Heat dairy-free milk in a small saucepan over medium-low heat until steaming (do not boil).
  6. Froth the hot milk using a handheld frother or by shaking it vigorously in a jar with a lid.
  7. Add 2-3 tablespoons of homemade pumpkin syrup to the bottom of a mug.
  8. Stir in a splash of hot coffee to dissolve the syrup, then pour in the rest of the coffee.
  9. Top with frothed milk and garnish with dairy-free whipped cream and a dusting of spice.
  10. Serve immediately.

Notes

Use 100% pure pumpkin puree, not pumpkin pie filling. The syrup can be stored in an airtight glass jar in the fridge for up to 2 weeks. If the syrup thickens too much in the fridge, warm it slightly or add a teaspoon of water before using. For a caffeine-free version, use decaf espresso or strong black tea.
