Instructions

  1. Prep Your Potatoes and Garlic (10 minutes): Peel potatoes if desired. Slice thinly about 1/8 inch thick using a mandoline or sharp knife. Toss slices in a large bowl with minced garlic, salt, pepper, and fresh thyme leaves. Set aside.
  2. Make the Béchamel Sauce (10 minutes): In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for about 2 minutes to form a roux. Slowly pour in warmed milk while whisking vigorously to avoid lumps. Continue whisking until sauce thickens and coats the back of a spoon, about 5 minutes. Remove from heat and stir in half of the shredded cheddar and Gruyère until melted and smooth. Adjust salt and pepper to taste.
  3. Layer the Potatoes and Sauce (5 minutes): Preheat oven to 375°F (190°C). Lightly butter a 9×13-inch baking dish. Arrange a layer of potato slices on the bottom, overlapping slightly.
