Description
A quick and creamy weeknight salad featuring raw broccoli, crispy bacon, and a tangy ranch dressing. It’s a meal in itself that tastes better after chilling in the fridge.
Ingredients
Scale
- 1 large head broccoli (about 600g), chopped into bite-sized florets
- 6–8 strips thick-cut bacon (about 150g)
- 1 small red onion, finely diced (about 50g)
- 1/2 cup (120g) full-fat mayonnaise
- 1 packet (1 ounce) dry ranch dressing mix
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon freshly ground black pepper
Instructions
- Wash the broccoli thoroughly and soak in water to remove dirt. Chop into bite-sized florets, including peeled stems, and place in a large mixing bowl.
- Heat a large skillet over medium heat. Cook bacon strips in a single layer for 4-5 minutes per side until crispy and dark golden brown. Transfer to a paper towel-lined plate to drain and cool, then crumble into small pieces.
- In a small bowl, whisk together mayonnaise, ranch dressing mix, lemon juice, garlic powder, and black pepper until smooth and creamy. Adjust consistency with a teaspoon of water or milk if too thick.
- Pour the dressing over the broccoli. Add the crumbled bacon, diced red onion, and any optional add-ins (like cheese or tomatoes). Toss until all broccoli is evenly coated.
- Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld and broccoli to soften slightly. Toss again before serving.
Notes
The salad improves with time; let it chill for at least 30 minutes. Do not freeze as the dressing will separate and broccoli will become mushy. Store in an airtight container in the refrigerator for up to 4 days. Use full-fat mayo for best texture. Ensure bacon is crispy to prevent sogginess.
