Description
A vibrant, thick, and creamy frozen drink made with just three main ingredients: frozen strawberries, matcha powder, and heavy cream. It offers a slushie-like texture and a perfect balance of earthy and fruity flavors.
Ingredients
- 1 ½ cups frozen strawberries (about 200g)
- 1 to 2 tablespoons culinary or ceremonial grade matcha powder
- ½ cup heavy cream (or full-fat canned coconut milk for dairy-free)
- Optional: 1 teaspoon honey or maple syrup
- Optional: Ice cubes (only if strawberries are slightly thawed)
Instructions
- Break apart frozen strawberries if they are in a large clump to ensure even blending.
- Add the frozen strawberries, matcha powder, and heavy cream to a high-speed blender.
- If using sweetener, add it now. Do not add extra liquid unless using almond milk, as the ingredients provide enough moisture.
- Blend on low speed, gradually increasing to high, for 45-60 seconds until the mixture is thick, smooth, and uniform in color.
- If the mixture is too thick to blend, add a splash of milk (about 2 tablespoons) to help it move.
- For a layered effect: Blend ¾ cup strawberries with ¼ cup cream for the pink base. In the same blender, blend the remaining ¼ cup cream with the matcha powder for the green top layer.
- Slowly pour the matcha mixture over the back of a spoon into the glass with the strawberry base to create layers.
- Serve immediately. Stir before drinking if layered, or enjoy as a uniform purple-pink slush if mixed.
- Top with fresh strawberry slices or mint if desired.
Notes
Use fresh, bright green matcha powder to avoid bitterness. Store matcha in the fridge or freezer after opening. Frozen strawberries are essential for the thick slushie texture; fresh strawberries will make the drink watery unless frozen solid beforehand. The drink is best served immediately as it melts quickly.
