Ingredients
- 1 pound raw shrimp, peeled and deveined, tails on
- 1 cup panko breadcrumbs (100g)
- 1 cup sweetened shredded coconut (80g)
- 2 large eggs
- Salt and pepper to taste
- Optional: pinch of smoked paprika or cayenne pepper
Instructions
- Pat shrimp dry with paper towels to ensure coating sticks.
- Beat eggs with a pinch of salt and pepper in one bowl.
- Mix panko breadcrumbs and shredded coconut (and optional smoked paprika or cayenne pepper) in another bowl.
- Dip each shrimp into the egg mixture, letting excess drip off, then dredge in the coconut-panko mixture, pressing gently to adhere.
- Preheat air fryer to 400°F (200°C) for about 3 minutes.
- Arrange shrimp in a single layer in the air fryer basket without overcrowding; cook in batches if needed.
- Air fry shrimp for 4-5 minutes, flip carefully, then cook another 4-5 minutes until golden brown and crispy.
- Serve immediately with your favorite dipping sauce.

Pat shrimp dry thoroughly to prevent soggy coating. Do not overcrowd the air fryer basket to ensure even crispiness. Flip shrimp halfway through cooking.
