  • 1 cup Panko breadcrumbs (100g)
  • ½ cup grated Parmesan cheese (50g)
  • ½ cup all-purpose flour (60g)
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning (or dried basil and oregano mix)
  • Salt and black pepper to taste
  • Olive oil spray

Instructions

  1. Wash and dry zucchini well. Cut each zucchini into fries about 3 inches long and ½ inch thick, keeping them uniform.
  2. Set up three bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with Panko breadcrumbs, grated Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  3. Coat each zucchini fry in the flour, shaking off excess. Dip into beaten eggs, letting excess drip off. Press into breadcrumb mixture to coat well. Lay out on a baking sheet or plate.
  4. Preheat air fryer to 400°F (200°C) for 3 minutes. Lightly spray air fryer basket with olive oil spray.
  5. Arrange zucchini fries in a single layer without touching. Air fry for 5 minutes, flip fries using tongs, spray lightly with olive oil, and cook for another 4-5 minutes until golden and crispy.
  6. Serve immediately with your favorite dipping sauce, optionally sprinkled with extra Parmesan and fresh parsley.
