Description

These crispy baked Parmesan zucchini chips are a healthy, crunchy snack or side dish made with simple ingredients and baked to perfection without frying.


Ingredients

  • 3 medium zucchini (about 1.5 pounds / 700g)
  • 1 cup finely grated Parmesan cheese (100g)
  • 2 tablespoons extra virgin olive oil (30ml)
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon freshly cracked black pepper
  • Optional: ½ teaspoon smoked paprika or Italian seasoning

Instructions

  1. Wash the zucchini and trim the ends. Slice into 1/8-inch (3mm) thick rounds using a mandoline or sharp knife.
  2. Lay slices on paper towels or a clean kitchen towel and sprinkle lightly with salt. Let sit for 10 minutes to draw out moisture.
  3. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  4. Pat zucchini slices dry with paper towels to remove moisture. Transfer to a mixing bowl.
  5. Add olive oil, garlic powder, black pepper, and optional seasoning. Toss gently to coat evenly.
  6. Add grated Parmesan cheese and toss again until slices are evenly coated.
  7. Arrange zucchini slices in a single layer on the prepared baking sheet without overlapping.
  8. Bake for 9-11 minutes, then carefully flip each slice and bake for another 9-11 minutes until golden brown and crisp.
  9. Transfer chips to a cooling rack or plate lined with paper towels to cool slightly before serving.

Notes

Salting and patting dry the zucchini slices is key to achieving crispiness. Use freshly grated Parmesan cheese for best results. Avoid overcrowding the baking sheet to prevent soggy chips. Flip halfway through baking for even crisping. Cool on a rack to maintain crunch. Reheat in oven at 350°F for 5-8 minutes if needed. Avoid microwaving to prevent sogginess.
