Ingredients

  • 2 pounds Yukon Gold potatoes
  • Water for boiling
  • 1 tablespoon salt (for boiling water)
  • ½ cup unsalted butter
  • 45 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • Sea salt and black pepper to taste
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Wash potatoes thoroughly (do not peel). If large, cut in half. Place in a large pot and cover with cold water by an inch. Add 1 tablespoon salt.
  2. Bring water to a boil, then reduce to a simmer. Cook for 15-20 minutes until tender. Drain in a colander and let steam-dry for 5 minutes.
  3. While potatoes boil, melt butter in a saucepan or microwave. Stir in minced garlic, rosemary, parsley, salt, and pepper. Set aside.
  4. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  5. Place drained potatoes on the baking sheet. Using the bottom of a heavy glass or mug, press down firmly on each potato to flatten to about ½-inch thickness, creating rough edges.
  6. Generously brush the garlic herb butter over the top of every potato, ensuring it gets into the cracks.
  7. Roast for 20-25 minutes until edges are deep golden brown and crispy. Optionally broil for the last 2-3 minutes for extra crispiness.
  8. Cool for 2-3 minutes before serving immediately.

Notes

Do not skip the steam-dry step after boiling to ensure maximum crispiness. Use enough butter to conduct heat and create a crust. If using Russet potatoes, be gentle when smashing as they are starchier. For leftovers, reheat in a skillet or air fryer to maintain crispiness; avoid microwaving.
