- ⅓ cup (35g) unsweetened cocoa powder (preferably Dutch-processed)
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup (200g) granulated sugar (optional: 1 tablespoon brown sugar for caramel flavor)
- 2 large eggs (room temperature)
- ⅓ cup (80ml) vegetable oil (canola or sunflower)
- 1 cup (240ml) milk (whole or 2%, or plant-based milk)
- 1 teaspoon vanilla extract
- 1 cup (170g) semi-sweet or dark chocolate chips or chunks
- Optional add-ins: ½ cup chopped walnuts or pecans, coarse sugar for topping
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, whisk together sugar, eggs, vegetable oil, milk, and vanilla extract until smooth and slightly frothy.
- Pour wet ingredients into dry ingredients. Gently fold together with a spatula until just combined; lumps are okay. Avoid overmixing.
- Fold in about ¾ cup of chocolate chips, reserving some to sprinkle on top.
- Divide batter evenly among muffin cups, filling each about ⅔ full. Sprinkle remaining chocolate chips on top.
- Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely before serving.
Notes
Do not overmix the batter to keep muffins tender. Use room temperature eggs and milk for better rise. You can substitute milk with plant-based alternatives. For richer flavor, swap 2 tablespoons of flour for extra cocoa powder. Optional add-ins include nuts or coarse sugar on top for texture. Muffins can be frozen individually wrapped for up to 3 months.
