Ingredients

  • 2 ½ cups all-purpose flour (315g)
  • ¾ cup granulated sugar (150g)
  • ½ cup light brown sugar (110g)
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup unsalted butter, cold and cut into cubes (225g)
  • 1 tablespoon apple cider vinegar (15ml)
  • 1 teaspoon vanilla extract (5ml)
  • 1 large egg yolk
  • 4 medium apples (about 3 cups peeled and chopped / 450g), mix of Granny Smith and Fuji
  • 1 tablespoon lemon juice (15ml)
  • 2 tablespoons cornstarch (16g)
  • 1 tablespoon granulated sugar (for apple filling)
  • Optional: ½ cup chopped pecans or walnuts for topping

Instructions

  1. Peel, core, and chop apples into ½-inch cubes. Toss with lemon juice to prevent browning. Measure dry ingredients and cut cold butter into cubes.
  2. In a large bowl, combine flour, granulated sugar, brown sugar, cinnamon, nutmeg, and salt. Add cold butter cubes and cut into mixture with a pastry cutter or forks until coarse crumbs form.
  3. Reserve 1 ½ cups of crumb mixture for topping. To remaining crumbs, stir in egg yolk, vanilla extract, and apple cider vinegar. Press mixture evenly into bottom of greased or parchment-lined 9×13-inch pan. Refrigerate crust while preparing filling.
  4. In a medium bowl, mix chopped apples with cornstarch, 1 tablespoon granulated sugar, and 1 teaspoon cinnamon until well coated.
  5. Remove crust from fridge and spread apple filling evenly on top. Sprinkle reserved crumb mixture over apples, pressing lightly to stick but remain crumbly.
  6. Bake at 350°F (175°C) for 35-40 minutes until topping is golden brown and filling bubbles around edges.
  7. Let bars cool completely in pan (about 30 minutes) before cutting into squares or rectangles. Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream.
