Description

Ingredients

  • 1 whole chicken (34 pounds)
  • 2 tablespoons butter, softened
  • Salt and pepper (generous amounts)
  • 4 cloves garlic, minced
  • 1 large onion, quartered
  • 1 lemon, halved
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 2 medium sweet potatoes, cubed
  • 1 pound Brussels sprouts, halved
  • 1 medium red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme (fresh or dried)

Instructions

  1. Preheat oven to 425°F (220°C). Pat the chicken dry with paper towels.
  2. Rub softened butter all over the chicken, including under the skin. Mix minced garlic with salt and pepper, and rub under the skin. Season the outside generously with salt and pepper.
  3. Stuff the cavity with quartered onion and halved lemon. Tie legs together with kitchen twine if desired.
  4. In a small bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, and garlic powder to make the glaze.
  5. Chop sweet potatoes, Brussels sprouts, and red onion. Toss with olive oil, thyme, salt, and pepper.
  6. Place chicken in a roasting pan. Roast for 20 minutes, then baste with half the glaze. Roast for another 20 minutes, then baste again.
  7. If roasting veggies separately, add them to the oven for the last 30 minutes, tossing halfway through.
  8. Chicken is done when internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  9. Remove chicken from oven and let rest for 10 minutes before carving. Serve with roasted veggies and extra glaze.

Notes

Pat the chicken dry for crispy skin. Do not skip the resting period to keep juices inside. Apply glaze halfway through cooking to prevent burning. Veggies can be swapped for asparagus, green beans, or apples. For dairy-free, swap butter for olive oil.
