Ingredients

  • 1/2 cup (120ml) water
  • 3/4 cup (150g) granulated white sugar
  • 1 tablespoon (6g) pumpkin pie spice
  • 1 teaspoon (2g) ground cinnamon
  • 1/4 teaspoon (1g) salt
  • 1 teaspoon (5ml) vanilla extract

Instructions

  1. In a small saucepan, combine water, pumpkin puree, and granulated sugar while cold. Whisk until smooth to prevent clumping.
  2. Add pumpkin pie spice, ground cinnamon, and salt. Whisk to combine.
  3. Place the saucepan over medium heat and stir constantly. Bring to a gentle simmer (do not boil) and cook for 5-7 minutes until the syrup thickens enough to coat the back of a spoon.
  4. Remove the pan from heat and immediately stir in the vanilla extract.
  5. Let the syrup cool in the pan for 5-10 minutes. It will continue to thicken as it cools.
  6. Pour the cooled syrup into a glass bottle or jar with an airtight lid. Store in the refrigerator.

Notes

Do not use pumpkin pie filling; use 100% pure pumpkin puree. Salt is essential to balance the sweetness and enhance the pumpkin flavor. For a smoother texture, strain the syrup through a fine-mesh sieve after cooking. The syrup can be frozen in ice cube trays for long-term storage.
