A simple, homemade pumpkin coffee syrup made with real pumpkin puree and spices. This 10-minute recipe avoids artificial ingredients and offers a rich, autumnal flavor for your morning coffee or other beverages.

- 1 cup (245g) plain pumpkin puree
- 1/2 cup (120ml) water
- 3/4 cup (150g) granulated white sugar
- 1 tablespoon (6g) pumpkin pie spice
- 1 teaspoon (2g) ground cinnamon
- 1/4 teaspoon (1g) salt
- 1 teaspoon (5ml) vanilla extract
Instructions
- In a small saucepan, combine water, pumpkin puree, and granulated sugar while cold. Whisk until smooth to prevent clumping.
- Add pumpkin pie spice, ground cinnamon, and salt. Whisk to combine.
- Place the saucepan over medium heat and stir constantly. Bring to a gentle simmer (do not boil) and cook for 5-7 minutes until the syrup thickens enough to coat the back of a spoon.
- Remove the pan from heat and immediately stir in the vanilla extract.
- Let the syrup cool in the pan for 5-10 minutes. It will continue to thicken as it cools.
- Pour the cooled syrup into a glass bottle or jar with an airtight lid. Store in the refrigerator.
Notes
Do not use pumpkin pie filling; use 100% pure pumpkin puree. Salt is essential to balance the sweetness and enhance the pumpkin flavor. For a smoother texture, strain the syrup through a fine-mesh sieve after cooking. The syrup can be frozen in ice cube trays for long-term storage.
