- 1/4 to 1/3 cup (30-40g) granulated erythritol or monk fruit sweetener
- 1 1/2 teaspoons pumpkin pie spice
- 1/4 teaspoon salt

Instructions
- Prep ingredients: Let cream cheese sit at room temperature for 30 minutes. Drain pumpkin puree if watery by pressing in a cheesecloth or sieve for 10 minutes.
- Whip cream cheese: In a large mixing bowl, beat softened cream cheese on medium-high speed until completely smooth and creamy, about 2-3 minutes. Scrape down sides.
- Add sweetener and spices: Add sweetener, pumpkin pie spice, vanilla extract, and salt to the cream cheese. Beat on medium speed until combined and glossy, about 1 minute. Taste and adjust sweetness if needed.
- Whip heavy cream: In a separate cold bowl, whip heavy cream on high speed until stiff peaks form, about 2-3 minutes. Be careful not to over-whip.
- Fold mixtures: Gently fold one-third of the whipped cream into the cream cheese mixture to lighten it. Then, gently fold in the remaining whipped cream until just combined. Do not overmix.
- Chill: Transfer mousse to serving glasses or a bowl. Cover and refrigerate for at least 1 hour, ideally 2-4 hours, to set.
- Serve: Top with optional toppings like chopped nuts, whipped cream, or chocolate shavings. Serve immediately.
