Fall Keto Pumpkin Cheesecake Mousse: Easy Sugar-Free Dessert

  • Author: Natalia
  • Total Time: 1 hour 15 minutes
  • Yield: 6 servings 1x

Description

A light, airy, and creamy sugar-free pumpkin cheesecake mousse that requires no baking. This keto-friendly dessert is ready in 15 minutes and tastes like autumn in a bowl.

Ingredients

Scale
  • 8 oz (225g) full-fat cream cheese, softened to room temperature
  • 1 cup (240ml) heavy whipping cream, cold
  • 1/2 cup (120g) 100% pure pumpkin puree, drained of excess liquid
  • 1 teaspoon vanilla extract
  • 1/4 to 1/3 cup (30-40g) granulated erythritol or monk fruit sweetener
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • Optional toppings: sugar-free whipped cream, chopped pecans or walnuts, dark chocolate shavings

Instructions

  1. Prep ingredients: Let cream cheese sit at room temperature for 30 minutes. Drain pumpkin puree if watery by pressing in a cheesecloth or sieve for 10 minutes.
  2. Whip cream cheese: In a large mixing bowl, beat softened cream cheese on medium-high speed until completely smooth and creamy, about 2-3 minutes. Scrape down sides.
  3. Add sweetener and spices: Add sweetener, pumpkin pie spice, vanilla extract, and salt to the cream cheese. Beat on medium speed until combined and glossy, about 1 minute. Taste and adjust sweetness if needed.
  4. Whip heavy cream: In a separate cold bowl, whip heavy cream on high speed until stiff peaks form, about 2-3 minutes. Be careful not to over-whip.
  5. Fold mixtures: Gently fold one-third of the whipped cream into the cream cheese mixture to lighten it. Then, gently fold in the remaining whipped cream until just combined. Do not overmix.
  6. Chill: Transfer mousse to serving glasses or a bowl. Cover and refrigerate for at least 1 hour, ideally 2-4 hours, to set.
  7. Serve: Top with optional toppings like chopped nuts, whipped cream, or chocolate shavings. Serve immediately.

Notes

Ensure cream cheese is fully softened to avoid lumps. Drain pumpkin puree thoroughly to prevent a runny texture. Chill equipment for whipping cream if the kitchen is warm. The mousse tastes better after chilling overnight.
