Ingredients

  • 2 cups apple cider (100% pure, unfiltered)
  • 4 scoops vanilla ice cream (about 2 cups)
  • 1/2 cup salted caramel sauce
  • Pinch of flaky sea salt
  • Optional: Whipped cream, cinnamon stick, apple chips, bourbon

Instructions

  1. Pour 1 cup of apple cider into a microwave-safe mug or small saucepan.
  2. Warm the cider until hot but not boiling (1-2 minutes in microwave or 3-4 minutes on stove over medium-low heat).
  3. Place one scoop of vanilla ice cream into each of two tall glasses.
  4. Slowly pour the warm cider over the ice cream, allowing it to fizz and melt slightly.
  5. Drizzle 1/4 cup of salted caramel sauce over the top of each float.
  6. Sprinkle a pinch of flaky sea salt over each float.
  7. Serve immediately with a spoon and straw.

Notes

Do not boil the cider as it loses fresh flavor. Use thick, dense vanilla ice cream to prevent melting too quickly. For a non-dairy version, use dairy-free ice cream and vegan caramel sauce. Can be customized with bourbon or spices.
