  • 4 large Bosc pears, peeled and sliced (about 1.2 kg)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract (optional)
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1 tablespoon cornstarch
  • 1/2 cup apple cider
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 teaspoon flaky sea salt
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, toss sliced pears with lemon juice and vanilla extract (if using).
  3. Add granulated sugar, cinnamon, ginger, cardamom, and cornstarch to the pears. Toss until evenly coated.
  4. Spread the pear mixture into the prepared baking dish. Drizzle apple cider over the top.
  5. In a separate bowl, combine rolled oats, flour, and brown sugar.
  6. Add cold, cubed butter to the oat mixture. Use a pastry cutter or fork to work the butter in until the mixture resembles coarse crumbs with pea-sized clumps.
  7. Spread the oat streusel evenly over the fruit filling.
  8. Bake for 40-45 minutes, or until the topping is golden brown and fruit juices are bubbling. Tent with foil if topping browns too quickly.
  9. Remove from oven and let cool on a rack for at least 15 minutes to allow filling to thicken.
  10. Sprinkle with flaky sea salt and serve warm.

Notes

Use firm Bosc pears to prevent mushiness. Cold butter is essential for a crunchy topping. Let the crisp cool for 15 minutes before serving to allow the filling to set. Leftovers taste better the next day as spices meld. Can be made dairy-free using vegan butter and gluten-free using certified GF oats and flour blend.
