- 4 large Bosc pears, peeled and sliced (about 1.2 kg)
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract (optional)
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cardamom
- 1 tablespoon cornstarch
- 1/2 cup apple cider
- 1 cup old-fashioned rolled oats
- 1/2 cup all-purpose flour
- 3/4 cup packed brown sugar
- 1/2 cup unsalted butter, cold and cubed
- 1/2 teaspoon flaky sea salt
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large bowl, toss sliced pears with lemon juice and vanilla extract (if using).
- Add granulated sugar, cinnamon, ginger, cardamom, and cornstarch to the pears. Toss until evenly coated.
- Spread the pear mixture into the prepared baking dish. Drizzle apple cider over the top.
- In a separate bowl, combine rolled oats, flour, and brown sugar.
- Add cold, cubed butter to the oat mixture. Use a pastry cutter or fork to work the butter in until the mixture resembles coarse crumbs with pea-sized clumps.
- Spread the oat streusel evenly over the fruit filling.
- Bake for 40-45 minutes, or until the topping is golden brown and fruit juices are bubbling. Tent with foil if topping browns too quickly.
- Remove from oven and let cool on a rack for at least 15 minutes to allow filling to thicken.
- Sprinkle with flaky sea salt and serve warm.
Notes
Use firm Bosc pears to prevent mushiness. Cold butter is essential for a crunchy topping. Let the crisp cool for 15 minutes before serving to allow the filling to set. Leftovers taste better the next day as spices meld. Can be made dairy-free using vegan butter and gluten-free using certified GF oats and flour blend.
