Description

A cozy, homemade chai latte made with real spices, full-fat oat milk, and maple syrup. This dairy-free and gluten-free drink offers café-quality froth and autumn flavors for a fraction of the cost.


Ingredients

  • 4 black tea bags (or 2 tablespoons loose leaf Assam or Ceylon tea)
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground black pepper
  • 1 small bay leaf
  • 2 tablespoons water (for blooming spices)
  • 2 cups (480ml) full-fat barista-style oat milk
  • 23 tablespoons pure maple syrup
  • 1/2 teaspoon pure vanilla extract
  • Pinch of salt
  • Extra cinnamon for garnish (optional)

Instructions

  1. In a small saucepan, combine ground ginger, cardamom, cloves, cinnamon, black pepper, and bay leaf. Add 2 tablespoons of water and heat over medium-low for 1-2 minutes, stirring constantly, until fragrant (bloom the spices).
  2. Pour in the oat milk and add the black tea bags. Turn heat to medium and stir gently. Heat slowly until small bubbles form around the edges (do not boil), about 5 minutes, allowing the tea to steep and spices to infuse.
  3. Remove the pan from heat. Stir in maple syrup, vanilla extract, and a pinch of salt. Taste and adjust sweetness or spice levels if desired.
  4. Froth the milk using an immersion blender for 10-15 seconds, a whisk, or a handheld frother until a thick, glossy microfoam forms.
  5. Remove tea bags and bay leaf from the pot. Pour the spiced milk into a large mug.
  6. Spoon the frothed milk foam on top. Dust with extra cinnamon if desired and serve immediately.

Notes

Do not boil the oat milk as it can separate and lose its creamy texture. Use fresh spices for the best flavor. The foam does not hold well if stored; make fresh for best results. Leftover spiced milk can be refrigerated for up to 2 days and reheated gently.
