Description
A quick and easy comfort food dinner perfect for game day or busy weeknights. These baked potatoes are stuffed with cheesy pulled pork, bacon, and all your favorite toppings.

- 4 large Russet potatoes
- 3–4 cups pulled pork (leftover or rotisserie chicken)
- 1/2 cup BBQ sauce
- 2 cups shredded cheddar cheese (mixed with Monterey Jack for meltiness)
- 4–5 stalks green onions, sliced thin
- 1 cup crumbled bacon
- 1/2 cup sour cream
- Optional: sliced jalapeños (fresh or pickled)
- 2 tablespoons butter or olive oil
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Wash and scrub potatoes, then pat dry.
- Pierce potatoes 4-5 times with a fork to let steam escape. Rub with butter/oil and sprinkle generously with salt.
- Bake potatoes directly on the rack or on a baking sheet for 45-60 minutes until soft when squeezed.
- While potatoes bake, warm pulled pork and BBQ sauce in a large skillet over medium-low heat.
- Stir half of the shredded cheese into the pork mixture until melted and gooey.
- Remove potatoes from oven and let cool for 2 minutes. Slice lengthwise down the center (leaving a hinge) and fluff the inside with a fork.
- Spoon the cheesy pork mixture generously into each potato.
- Top with remaining cheese, crumbled bacon, green onions, and jalapeños.
- Return to oven for 2-3 minutes or broil for 1 minute until cheese is melted and bubbly.
- Serve immediately with sour cream on the side.
Notes
For crispy skin, do not wrap potatoes in foil. If short on time, microwave potatoes for 5 minutes before baking. To keep meat moist when reheating, add a splash of broth or extra BBQ sauce. Avoid overstuffing to prevent the potato from falling apart.
