  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour

  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional)
  • 2 tablespoons unsalted butter (for caramel)
  • 1/4 cup heavy cream
  • 1/2 cup light brown sugar (for caramel)
  • 1/4 teaspoon salt (for caramel)
  • Flaky sea salt (like Maldon), for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides, and grease lightly.
  2. Melt 1/2 cup butter in a microwave-safe bowl. In a large bowl, whisk granulated and dark brown sugars together, then whisk in the melted butter until glossy.
  3. Add eggs one at a time, whisking well after each, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, cocoa powder, and 1/2 teaspoon salt. Fold dry ingredients into wet ingredients until just combined. Do not overmix. Fold in chocolate chips if using.
  5. Pour batter into prepared pan and spread evenly.
  6. In a small saucepan over medium heat, combine 2 tablespoons butter, heavy cream, light brown sugar, and 1/4 teaspoon salt. Stir until butter melts and sugar dissolves, then simmer for 2-3 minutes until slightly thickened.
  7. Drop small spoonfuls of caramel over the brownie batter. Use a knife or toothpick to gently swirl the caramel into the batter to create marbled patterns.
  8. Bake for 25-30 minutes until edges are set but the center still jiggles slightly. A toothpick inserted should come out with moist crumbs.
  9. Cool completely in the pan (at least 30 minutes). Lift out using parchment overhang and cut into 1-inch squares.
  10. Sprinkle generously with flaky sea salt while slightly warm.

Notes

Brownies continue to cook in the hot pan after removal, so do not overbake. For best texture and clean cuts, let cool completely or refrigerate for an hour before cutting. Store in an airtight container at room temperature for up to 3 days or in the fridge for up to 1 week. They freeze well for up to 3 months.
