- 1 pound (450g) lean ground turkey (93/7)
- 1 can (15 oz) black beans, drained and rinsed
- 2 tablespoons taco seasoning (homemade or store-bought)
- 2 cups (200g) shredded Mexican blend cheese
- 1 cup (240g) salsa
- 3–4 stalks green onions, sliced
- 1/2 cup cilantro, chopped
- 1/2 cup sour cream
- 1 avocado, diced
- 1/4 cup jalapeños, sliced
- 1 tablespoon oil (for browning turkey)
- 2 tablespoons water (for seasoning)
Instructions
- Preheat oven to 400°F (200°C).
- Heat oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until no pink remains (5-7 minutes). Drain excess fat if necessary.
- Stir in taco seasoning and 2 tablespoons of water. Simmer for 1 minute, then set aside.
- Line a large sheet pan (18×13 inches) with parchment paper. Spread tortilla chips in a single layer.
- Scatter the seasoned ground turkey evenly over the chips, followed by the black beans.
- Sprinkle the shredded cheese over the top.
- Bake for 8-10 minutes until cheese is bubbly and chips are golden.
- Remove from oven and let sit for 1 minute.
- Top with green onions, cilantro, avocado, jalapeños, and dollops of sour cream.
- Serve immediately.
Notes
Use sturdy, restaurant-style tortilla chips to prevent sogginess. Brown the turkey in a skillet before baking to ensure it cooks evenly. Do not add wet toppings like sour cream or salsa until after baking to maintain crispness. Leftovers can be stored in the refrigerator for up to 3 days and reheated in an air fryer or toaster oven to restore crunch.
