  • 3 tablespoons (45ml) Neutral Oil (avocado or grapeseed)
  • 1 teaspoon Smoked Paprika
  • 1 large Yellow Onion, finely diced
  • 4 cloves Garlic, minced
  • 1 cup (240ml) Vegetable Broth (low-sodium)
  • 1 cup (240ml) Heavy Cream (full-fat)
  • 1 tablespoon Dijon Mustard
  • ½ cup (50g) Parmesan Cheese, freshly grated
  • 1 pound (450g) Brown Rice Pasta (short shape like penne or rigatoni)
  • ¼ cup Fresh Parsley, chopped
  • Salt and Black Pepper to taste

Instructions

  1. Prep the grill by creating a two-zone fire: direct heat for searing and indirect heat for simmering. Clean the grates thoroughly.
  2. Toss mushrooms with oil and smoked paprika. Grill on direct heat for 3-4 minutes per side until charred and tender. Remove and set aside.
  3. While mushrooms grill, boil salted water and cook brown rice pasta until al dente. Reserve 1 cup of pasta water before draining.
  4. Place a large skillet on the indirect heat side of the grill. Sauté diced onion in oil until translucent, then add garlic and cook for 1 minute.
  5. Deglaze the pan with vegetable broth, then stir in heavy cream and Dijon mustard. Simmer for 3-4 minutes until slightly thickened.
  6. Remove skillet from direct heat. Stir in Parmesan cheese until melted. Add grilled mushrooms back to the skillet.
  7. Combine drained pasta with the sauce and mushrooms. Toss to coat, adding reserved pasta water if needed to adjust consistency.
  8. Stir in fresh parsley, season with salt and pepper, and serve immediately.

Notes

Do not crowd the grill to ensure mushrooms char rather than steam. Keep the sauce warm but not boiling to prevent separation. Reserve pasta water as it helps the sauce cling to the noodles. For a vegan option, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
