  • ½ cup almond flour (60g)
  • 2 large eggs
  • 3 cloves garlic, minced
  • 2 stalks green onions, chopped
  • ¼ cup feta cheese, crumbled (optional)
  • 1 teaspoon dried oregano
  • ½ teaspoon salt (plus more for zucchini)
  • ¼ teaspoon black pepper
  • 23 tablespoons olive oil

Instructions

  1. Wash zucchini and trim ends. Grate using a box grater or food processor until you have about 3 cups of shredded zucchini.
  2. Place shredded zucchini in a clean kitchen towel and squeeze tightly over the sink to remove as much moisture as possible. This is crucial for crispiness.
  3. In a large bowl, combine the squeezed zucchini, almond flour, eggs, minced garlic, green onions, feta cheese, oregano, salt, and pepper. Mix well until the batter is sticky and holds together.
  4. Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Wait until the oil shimmers.
  5. Form about ¼ cup of the mixture into a patty in your hand, flatten slightly, and place in the hot skillet. Repeat to add 3-4 patties, ensuring not to crowd the pan.
  6. Cook for 2-3 minutes on the first side until golden brown and crispy. Flip carefully and cook for another 2-3 minutes on the other side.
  7. Transfer cooked fritters to a wire rack or paper towel-lined plate to drain excess oil. Serve immediately with lemon wedges and tzatziki or sour cream.

Notes

Squeezing the water out of the zucchini is the most important step to prevent soggy fritters. Do not overcrowd the pan; cook in batches if necessary. For a dairy-free version, skip the feta and use a flax egg. For a nut-free version, substitute almond flour with chickpea flour or certified gluten-free oat flour.
