A cheap, high-protein breakfast for one that tastes like dessert. This overnight oats recipe requires no cooking, just mix ingredients in a jar and refrigerate overnight for a creamy, satisfying morning meal.
Ingredients
- 1/2 cup old-fashioned rolled oats
- 1/2 cup milk of choice (e.g., unsweetened almond milk)
- 1 tablespoon chia seeds
- 2 tablespoons peanut butter (creamy)
- 1 tablespoon unsweetened cocoa powder
- 1 scoop protein powder (vanilla or chocolate)
- 1–2 teaspoons sweetener (stevia, monk fruit, honey, or maple syrup)
- 1 tablespoon dark chocolate chips (optional)
- 1/2 medium banana, sliced (optional)
- 1/2 teaspoon cinnamon (optional)
- 2–3 ice cubes (optional, for serving)
Instructions
- Add dry ingredients (oats, chia seeds, cocoa powder, protein powder) to a 16-ounce mason jar and mix to distribute evenly.
- Pour in milk, peanut butter, sweetener, and cinnamon. Stir or shake to combine.
- Secure the lid tightly and shake the jar vigorously for 30 seconds to break up clumps and mix thoroughly.
- Refrigerate the jar for at least 2 hours, preferably 6-8 hours (overnight).
- In the morning, stir well. Add a splash of milk if too thick.
- Top with optional ingredients like dark chocolate chips, banana slices, or ice cubes before eating.
Notes
Do not use instant oats as they turn to mush; do not use steel-cut oats as they won’t soften overnight. If using chocolate protein powder, you may want to reduce the cocoa powder slightly. The oats will absorb liquid and thicken over time; add a splash of milk before eating if desired. This recipe can be scaled to make 3-4 jars for the week, storing them in the fridge for up to 4 days.
