  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • ¾ cup (150g) granulated sugar OR ½ cup (100g) erythritol/stevia blend
  • ½ cup (45g) unsweetened cocoa powder (Dutch-processed preferred)
  • ½ cup (60g) all-purpose flour OR ¾ cup (60g) almond flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (85g) semi-sweet or dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides, and lightly spray with cooking spray.
  2. Add cottage cheese, eggs, vanilla extract, and sweetener to a blender or food processor. Blend on high for 1-2 minutes until completely smooth with no visible curds. Pour into a large mixing bowl.
  3. Add cocoa powder, flour (or almond flour), baking powder, and salt to the wet mixture. Stir with a spatula until just combined. Do not overmix.
  4. Gently fold in the chocolate chips, reserving a small handful for topping if desired.
  5. Pour batter into the prepared pan and spread evenly. Bake for 20-25 minutes. The edges should be set, but the center should still look slightly soft. A toothpick should come out with moist crumbs attached.
  6. Let brownies cool in the pan for at least 15 minutes before lifting them out and slicing into squares.

Notes

Ensure cottage cheese is fully blended for a smooth texture. Do not overbake as protein dries out faster; brownies will firm up as they cool. Store in an airtight container at room temperature for 3 days or in the fridge for 5 days. Can be frozen for up to 3 months.
