Creamy, custard-like high-protein egg bites made with cottage cheese, spinach, and feta. Ready in under 20 minutes and perfect for meal prep.

- 1 cup (225g) full-fat cottage cheese
- 4 large eggs
- 2 tablespoons (30ml) heavy cream
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup (30g) chopped spinach (frozen or fresh)
- 1/2 cup (75g) crumbled feta cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Avocado oil spray or cooking spray
Instructions
- Preheat oven to 325°F (165°C) and grease a standard 12-cup muffin tin with cooking spray.
- Add cottage cheese, eggs, heavy cream, salt, pepper, garlic powder, and onion powder to a blender.
- Blend on high for 45-60 seconds until the mixture is completely smooth and silky.
- If using frozen spinach, thaw and squeeze out all excess water until dry. Chop finely.
- Add spinach, feta cheese, and any optional mix-ins to the blender and pulse a few times to distribute.
- Pour the mixture into the prepared muffin cups, filling them about 3/4 full.
- Bake for 15-18 minutes until the tops are set, slightly golden, and a knife inserted comes out clean.
- Let cool in the tin for 5 minutes before removing to serve.
Notes
Ensure spinach is thoroughly squeezed dry to prevent watery bites. Blend cottage cheese until completely smooth for a custard-like texture. Do not overfill muffin cups as they will rise. Can be stored in the fridge for up to 5 days or frozen for up to 2 months.
