  • 1 clove garlic, minced
  • 1 teaspoon (5ml) olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 23 tablespoons tzatziki sauce
  • 1 small warm pita bread (or lettuce cups for low-carb)
  • 1 tablespoon chopped fresh parsley or dill
  • 1 cup cherry tomatoes or cucumber slices

Instructions

  1. Pat the chicken breast dry with a paper towel and cut into 1-inch cubes.
  2. In a small bowl or Ziploc bag, whisk together Greek yogurt, lemon juice, minced garlic, olive oil, oregano, salt, and pepper until smooth.
  3. Add the chicken cubes to the marinade and toss to coat evenly. Let sit at room temperature for 10-15 minutes (or up to 30 minutes).
  4. Heat a skillet over medium-high heat. Add the chicken cubes in a single layer.
  5. Cook for 4-5 minutes without moving too much to allow browning, then flip and cook for another 4-5 minutes until internal temperature reaches 165°F (74°C).
  6. While chicken cooks, warm the pita bread in the microwave for 10-15 seconds or toast in a dry pan.
  7. Plate the chicken with tzatziki sauce, fresh herbs, and side veggies. Serve in or alongside the warm pita.

Notes

For best results, use Greek yogurt rather than regular yogurt to ensure the marinade is thick enough to coat the chicken. If using wooden skewers, soak them in water for 20 minutes before grilling. Chicken can be marinated for up to 24 hours, but texture may become mushy if left too long. To reduce sodium, choose low-sodium pita and tzatziki.
