  • 2 tablespoons fresh lime juice (about 30ml)
  • 2 tablespoons olive oil (30ml), divided
  • 1 teaspoon smoked paprika
  • Salt, to taste (preferably kosher salt)
  • Black pepper, freshly cracked, to taste
  • 4 cups vegetables for roasting (about 600g) such as green beans, cherry tomatoes, or thinly sliced bell peppers

Instructions

  1. Preheat oven to 425°F (220°C). Wash and trim your vegetables. Place them on one side of a large rimmed sheet pan. Drizzle with 1 tablespoon olive oil, salt, and pepper, then toss to coat.
  2. Pat salmon fillets dry with paper towels to help the glaze stick and the skin crisp up.
  3. In a small bowl, whisk together honey, minced chipotle peppers, minced garlic, lime juice, smoked paprika, and 1 tablespoon olive oil until smooth and glossy. Adjust spiciness by adding more chipotle or cayenne if desired.
  4. Push the veggies to one side of the sheet pan. Lay the salmon fillets skin-side down on the empty side. Brush each fillet generously with the honey chipotle glaze, including the sides. For extra crispy skin, lightly brush salmon skin with olive oil before glazing.
  5. Roast in the preheated oven for 12-15 minutes, depending on thickness, until salmon is opaque and flakes easily (internal temperature about 145°F / 63°C). Vegetables should be tender and slightly caramelized.
  6. Optional: Switch oven to broil and broil for 1-2 minutes to caramelize the glaze. Watch closely to prevent burning.
  7. Carefully transfer salmon fillets and roasted vegetables to plates. Optionally, squeeze extra lime juice over the top and garnish with chopped cilantro or green onions. Serve with a simple side salad or crusty bread.
