  • 1 pound raw shrimp, peeled and deveined (medium or large, tail-on or off)
  • 2 tablespoons extra virgin olive oil
  • 4 large garlic cloves, minced (about 2 tablespoons)
  • ½ cup sun-dried tomatoes, chopped (oil-packed preferred)
  • 1 cup heavy cream (full-fat)
  • ½ cup freshly grated Parmesan cheese (about 50g)
  • 1 teaspoon Italian seasoning
  • 2 cups fresh baby spinach (optional)
  • Salt and pepper to taste (start with ½ teaspoon salt)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prep your ingredients: mince garlic, chop sun-dried tomatoes, grate Parmesan, and rinse spinach if using.
  2. Heat olive oil over medium-high heat in a large skillet. Season shrimp lightly with salt and pepper. Cook shrimp about 2 minutes per side until pink and just cooked through. Remove shrimp and set aside.
  3. Lower heat to medium. Add a little more oil if needed, then add minced garlic and chopped sun-dried tomatoes. Stir constantly for 1-2 minutes until garlic is fragrant but not browned.
  4. Pour in heavy cream and sprinkle in Italian seasoning. Stir and let simmer gently for 3-4 minutes, stirring occasionally until sauce thickens. Add a splash of water or broth if sauce is too thick.
  5. Remove skillet from heat and stir in grated Parmesan cheese until melted. Toss in baby spinach and stir until wilted.
  6. Return cooked shrimp to skillet and toss gently to coat with sauce. Taste and adjust seasoning with salt and pepper. Sprinkle with fresh parsley and serve immediately.
