These keto grilled shrimp skewers are a fast, healthy, and flavorful weeknight dinner solution. With a simple garlic-butter-lemon marinade and minimal cleanup, they come together in under 30 minutes for a low-carb meal the whole family will love.
Ingredients
- 1.5 pounds jumbo shrimp (21–25 count per pound), peeled and deveined
- 4 stalks green onions, sliced into 2-inch pieces
- 1 large red bell pepper, cut into 1-inch squares
- 1 cup cherry tomatoes
- 3 tablespoons extra virgin olive oil
- 2 tablespoons unsalted butter, melted
- 4 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 8–10 wooden or bamboo skewers
Instructions
- Soak wooden skewers in water for at least 15 minutes to prevent burning.
- In a medium bowl, whisk together olive oil, melted butter, minced garlic, lemon juice, lemon zest, oregano, red pepper flakes, salt, and pepper.
- Add thawed and dried shrimp to the marinade, tossing gently to coat. Let sit for 10-15 minutes at room temperature.
- Thread shrimp and vegetables onto skewers using a pattern (e.g., shrimp, green onion, bell pepper, shrimp, cherry tomato, shrimp), leaving space between items.
- Preheat grill to medium-high heat (approx. 400°F) and oil the grates.
- Grill skewers for 3-4 minutes per side, flipping once, until shrimp are opaque, pink, and have slight char marks.
- Serve immediately, optionally squeezing extra fresh lemon over the top.
Notes
Pat shrimp dry before marinating to ensure proper searing. Do not marinate for too long as the acid can make the shrimp mushy. If using wooden skewers, soaking is essential. Shrimp are done when they form a ‘C’ shape; an ‘O’ shape indicates overcooking. For dairy-free, substitute butter with olive oil.
