Keto Pumpkin Spice Mug Cake: Easy Outdoor Grilling Recipe

  • Author: Natalia
  • Total Time: 15 minutes
  • Yield: 1 serving 1x

Description

A moist, smoky, and low-carb pumpkin spice mug cake cooked on a charcoal grill using indirect heat. This keto-friendly dessert uses almond flour and offers a unique outdoor cooking experience with minimal mess.

Ingredients

Scale
  • 1/4 cup (25g) super-fine almond flour
  • 2 tablespoons (30g) pure pumpkin puree
  • 1 large egg
  • 2 tablespoons (30ml) unsweetened almond milk
  • 23 tablespoons (20-30g) granulated keto sweetener (erythritol or monk fruit blend)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional: Keto-friendly chocolate chips or chopped pecans

Instructions

  1. Preheat grill to 350°F-375°F (175°C-190°C) using indirect heat. If using charcoal, bank coals to one side. Soak wood chips for 20 minutes if using for smoke flavor.
  2. In a heat-resistant ceramic mug, whisk together almond flour, sweetener, baking powder, pumpkin pie spice, and salt until no lumps remain.
  3. Add the egg, pumpkin puree, almond milk, and vanilla extract. Whisk vigorously until the batter is smooth and creamy.
  4. Fold in optional mix-ins like chocolate chips or nuts, pressing them slightly into the batter.
  5. Place the mug on the cooler side of the grill (indirect heat). Close the lid and cook for 6 minutes without opening.
  6. Check doneness by inserting a toothpick into the center. If wet, close lid and check every 2 minutes. Total cook time is 8-10 minutes.
  7. Remove mug with tongs and let rest for 2 minutes to allow structure to set before serving warm.

Notes

Use indirect heat to prevent burning the bottom. Do not overmix the batter to avoid a dense texture. Applewood or cherry wood chips provide the best flavor profile; avoid strong woods like mesquite. This recipe is best served fresh as almond flour dries out quickly upon storage.
