- 4 salmon fillets (about 6 oz / 170g each), fresh or thawed frozen
- 1 large lemon, thinly sliced
- Juice of ½ lemon
- 2 tablespoons fresh dill, chopped
- 2 cloves garlic, minced
- 2 tablespoons (30 ml) extra virgin olive oil
- Salt, to taste
- Black pepper, to taste
- Optional: pinch of red pepper flakes
Instructions
- Preheat oven to 400°F (200°C). Rinse salmon fillets under cold water and pat dry with paper towels.
- Thinly slice the lemon and chop the fresh dill. Mince the garlic and mix it with olive oil and lemon juice in a small bowl.
- Line a baking sheet with foil. Place salmon fillets skin-side down, spaced slightly apart.
- Brush the olive oil, garlic, and lemon juice mixture evenly over each fillet.
- Sprinkle salt, pepper, and chopped dill over the salmon. Tuck lemon slices around and on top of the fillets.
- Bake in the preheated oven for 12-15 minutes, until salmon flakes easily with a fork and is opaque throughout.
- Remove from oven and squeeze fresh lemon juice over the salmon. Add a final sprinkle of dill and optional red pepper flakes.
- Serve immediately with your choice of sides.
