Ingredients

  • 4 salmon fillets (about 6 oz / 170g each), fresh or thawed frozen
  • 1 large lemon, thinly sliced
  • Juice of ½ lemon
  • 2 tablespoons fresh dill, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons (30 ml) extra virgin olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat oven to 400°F (200°C). Rinse salmon fillets under cold water and pat dry with paper towels.
  2. Thinly slice the lemon and chop the fresh dill. Mince the garlic and mix it with olive oil and lemon juice in a small bowl.
  3. Line a baking sheet with foil. Place salmon fillets skin-side down, spaced slightly apart.
  4. Brush the olive oil, garlic, and lemon juice mixture evenly over each fillet.
  5. Sprinkle salt, pepper, and chopped dill over the salmon. Tuck lemon slices around and on top of the fillets.
  6. Bake in the preheated oven for 12-15 minutes, until salmon flakes easily with a fork and is opaque throughout.
  7. Remove from oven and squeeze fresh lemon juice over the salmon. Add a final sprinkle of dill and optional red pepper flakes.
  8. Serve immediately with your choice of sides.
