Description

  • 1 cup sour cream (240ml), full-fat
  • 1 can cream of chicken soup (10.5 oz / 298ml), low sodium preferred
  • 4 tablespoons butter (57g), melted
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste (start with 1/2 teaspoon salt)
  • Optional: 1/2 cup cooked bacon bits (75g)
  • 2 stalks green onions, sliced

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. If hashbrowns are frozen solid, thaw for 15-20 minutes on the counter or overnight in the fridge until soft but not soggy.
  3. In a large mixing bowl, combine thawed hashbrowns, sour cream, cream of chicken soup, melted butter, onion powder, garlic powder, salt, and pepper. Stir until evenly coated.
  4. Reserve 1 cup of shredded cheddar cheese for topping. Fold the remaining cheese into the hashbrown mixture gently.
  5. Pour the mixture into the prepared baking dish and spread evenly. Sprinkle the reserved cheese over the top.
  6. Bake uncovered for 45-55 minutes until the top is golden, bubbly, and edges are crispy. Tent with foil if the top browns too quickly before the inside is hot.
  7. Let the casserole rest for 5-10 minutes after baking. Garnish with sliced green onions and bacon bits if desired. Serve warm.

Use freshly shredded cheese for best melting and texture. Thaw hashbrowns just enough to avoid sogginess.
