Description

A crisp, creamy, and refreshing summer snack made with Greek yogurt, berries, and honey. This no-cook frozen treat is low in calories, high in protein, and endlessly customizable.


Ingredients

  • 2 cups (450g) plain Greek yogurt (2% or non-fat)
  • 23 tablespoons (30-45ml) honey or maple syrup
  • 1 teaspoon (5ml) vanilla extract
  • 1.5 cups (200g) fresh or frozen berries (strawberries, blueberries, raspberries, blackberries)
  • 1 tablespoon (10g) chia seeds or hemp hearts (optional)
  • 2 tablespoons (15g) unsweetened shredded coconut flakes (optional)
  • 1/4 cup (40g) dark chocolate chips (optional, for drizzle)

Instructions

  1. Line a 13×9 inch baking sheet with parchment paper.
  2. If using fresh berries, wash and dry them thoroughly, then chop strawberries into bite-sized pieces. If using frozen berries, thaw slightly and pat dry.
  3. In a medium bowl, combine Greek yogurt, honey, and vanilla extract. Stir vigorously until smooth and homogeneous.
  4. Pour the yogurt mixture onto the prepared baking sheet. Use a silicone spatula to spread it into an even layer, approximately 1/4 inch thick.
  5. Scatter berries evenly over the yogurt. Sprinkle with chia seeds, hemp hearts, and coconut flakes if using.
  6. Place the baking sheet in the freezer for at least 4 hours, or overnight, until the yogurt is frozen solid.
  7. If adding chocolate, melt dark chocolate chips in the microwave in 15-second intervals, stirring until smooth. Drizzle over the frozen bark and return to freezer for 5 minutes to set.
  8. Lift the parchment paper out of the pan and break the bark into irregular 2×3 inch chunks by hand.
  9. Serve immediately or store in an airtight container.

Notes

Ensure berries are completely dry before adding to prevent icy texture. Use thick Greek yogurt for best results. Store in an airtight container in the freezer for up to 2 months. Do not store in the refrigerator as it will melt.
