  • 12 large eggs
  • 1 pound breakfast sausage or bacon
  • 2 cups hash browns or diced potatoes
  • 2 cups shredded cheddar cheese
  • 23 tablespoons heavy cream or milk
  • Salt and black pepper to taste
  • Optional: Diced bell peppers, onions, or spinach
  • Butter or oil for cooking

Instructions

  1. Preheat oven to 350°F to warm tortillas slightly for easier rolling.
  2. In a large skillet over medium-high heat, cook diced potatoes or hash browns until golden brown and crispy (10-12 minutes). Remove to a paper towel-lined plate to drain excess oil.
  3. In the same skillet, cook the sausage or bacon until browned and crispy. Drain excess grease if necessary. Set aside with the potatoes.
  4. Whisk eggs with heavy cream (or milk), salt, and pepper in a large bowl.
  5. In a clean skillet over medium-low heat, scramble the eggs gently until soft and slightly wet. Remove from heat immediately to prevent drying out.
  6. Assemble burritos by placing eggs, potatoes, meat, and cheese in the center of a tortilla, leaving a 2-inch border.
  7. Fold the bottom edge up, fold in the sides, and roll tightly.
  8. Wrap each burrito tightly in heavy-duty aluminum foil, then place in a freezer-safe zip-top bag, squeezing out excess air.
  9. Label with date and freeze flat for up to 3 months.
  10. To reheat in microwave: Unwrap and heat on high for 2-3 minutes, rotating halfway. Let rest 1 minute.
  11. To reheat in oven: Bake foil-wrapped burrito at 375°F for 20-25 minutes. Unwrap for last 5 minutes for crispiness.
  12. To reheat in air fryer: Cook unwrapped burrito at 375°F for 10-12 minutes, flipping halfway.

Notes

Ensure potatoes and veggies are cooked and dry to prevent soggy burritos. Wrap tightly to avoid freezer burn. Warm tortillas before rolling to prevent cracking. Do not add salsa before freezing as moisture causes sogginess.
