- ½ cup unsweetened shredded coconut (45g)
- 6 tablespoons butter, melted (85g)
- 16 ounces cream cheese, softened (450g)
- ½ cup sour cream (120ml)
- ¾ cup granulated sugar (150g)
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup fresh mango, diced (165g)
- ½ teaspoon coconut extract (optional)
Instructions
- Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, shredded coconut, and melted butter. Stir until evenly moistened.
- Press the crust mixture firmly into the bottom of an 8×8-inch baking pan. Use the back of a spoon or flat glass to compact it. Bake for 10 minutes until golden and fragrant.
- While crust bakes, dice mango into small pieces. In a large bowl, beat softened cream cheese with an electric mixer until smooth.
- Add sour cream, sugar, vanilla extract, and coconut extract (if using). Beat until fully combined.
- Add eggs one at a time, mixing on low speed just until incorporated to avoid air bubbles.
- Gently fold in diced mango with a spatula.
- Lower oven temperature to 325°F (160°C). Pour filling over warm crust and spread evenly.
- Bake for 35-40 minutes, until edges are set but center jiggles slightly when shaken.
- Let bars cool completely at room temperature, then refrigerate for at least 3 hours or overnight to firm up.
- Use parchment paper to lift bars from pan. Slice into squares and garnish with toasted coconut flakes or extra diced mango if desired. Serve chilled.

Toast the shredded coconut for extra flavor. Use room temperature cream cheese to avoid lumps. Press crust firmly to hold together. Bake until center jiggles slightly to avoid overbaking.
