- ⅓ cup maple syrup (80 ml)

- 2 large eggs
- ½ cup plain Greek yogurt (120 g)
- ¼ cup vegetable oil (60 ml)

Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners or grease generously. Lightly toast nuts in a dry skillet over medium heat for 3-4 minutes until fragrant, then chop roughly (optional).
- In a large bowl, mash ripe bananas with a fork or potato masher until mostly smooth but still a bit chunky.
- Add maple syrup, vegetable oil, eggs, Greek yogurt, and vanilla extract to the mashed bananas. Whisk until smooth and well combined.
- In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- Gently fold dry ingredients into the wet banana mixture using a spatula. Stop mixing as soon as flour streaks disappear. Fold in toasted nuts and chocolate chips if using.
- Divide batter evenly among the 12 muffin cups, filling about ¾ full. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
