Ingredients
- 2 pounds (about 900g) sweet potatoes, peeled and cut into 1-inch cubes
- 3 tablespoons (45ml) pure maple syrup
- 2 tablespoons (30ml) olive oil
- 1 teaspoon ground cinnamon
- ½ teaspoon salt (kosher or sea salt recommended)
- ¼ teaspoon freshly ground black pepper (optional)
- ½ teaspoon garlic powder
- Optional add-ins:
- 1 tablespoon chopped fresh rosemary or thyme
- Toasted pecans or walnuts for topping
Instructions
- Preheat oven to 425°F (220°C).
- Peel and chop sweet potatoes into roughly 1-inch cubes, keeping pieces uniform.
- In a small bowl, whisk together maple syrup, olive oil, cinnamon, salt, black pepper, and garlic powder to make the glaze.
- Place sweet potato cubes in a large mixing bowl and pour the glaze over them. Toss gently with a spatula or hands until evenly coated.
- Spread the sweet potatoes in a single layer on a parchment-lined baking sheet, ensuring they are not crowded.
- Roast in the preheated oven for 25-30 minutes, flipping once halfway through, until edges are golden brown and centers are tender.
- If using fresh herbs, sprinkle them over the potatoes in the last 5 minutes of roasting to avoid burning.
- If using nuts, toast them separately in a dry pan for a few minutes and sprinkle on top just before serving.
- Serve hot with an extra drizzle of maple syrup or a sprinkle of flaky sea salt if desired.
Notes
Roast at high heat (425°F) for caramelized edges. Avoid overcrowding the pan to prevent steaming. Flip once halfway through roasting for even browning. Use real pure maple syrup for best flavor and glaze. Leftovers reheat well in a skillet with a splash of olive oil or water. Not recommended to freeze due to texture changes.
