  • 1/4 cup pure maple syrup (60ml)
  • 3 tablespoons Dijon mustard (45g)
  • 2 cloves garlic, minced (about 2 teaspoons)
  • 1 tablespoon extra virgin olive oil (15ml)
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/4 teaspoon red pepper flakes
  • Optional: 1 teaspoon dried thyme or rosemary

Instructions

  1. Trim off any silver skin or excess fat from the pork tenderloin with a sharp knife. Pat the pork dry with paper towels.
  2. In a small bowl, whisk together maple syrup, Dijon mustard, minced garlic, olive oil, salt, and pepper. Add optional herbs or red pepper flakes if desired.
  3. Place the tenderloin in an oven-safe skillet or roasting pan and pour half the glaze over it. Use tongs or a spoon to coat the pork evenly. Reserve the remaining glaze.
  4. Heat the skillet over medium-high heat and sear the pork on all sides until golden brown, about 1-2 minutes per side. (Skip this step if using a roasting pan.)
  5. Preheat oven to 400°F (200°C). Transfer the skillet or roasting pan to the oven and roast the pork for 15-20 minutes, or until the internal temperature reaches 145°F (63°C). Halfway through, brush the reserved glaze over the pork.
  6. Remove the pork from the oven and transfer to a cutting board. Tent with foil and let rest for 5-10 minutes.
  7. Slice the pork into medallions and drizzle with any pan juices before serving.

Notes

Do not skip searing to develop a flavorful crust and help the glaze stick. Use a meat thermometer to avoid overcooking; 145°F (63°C) is ideal. Reserve some glaze to brush halfway through roasting for layered flavor. Let the pork rest before slicing to retain juices. Marinate up to 2 hours ahead for enhanced flavor. Can be grilled as an alternative cooking method.
