  • 3 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon caraway seeds
  • 1 teaspoon fennel seeds
  • 1/2 teaspoon mustard seeds
  • 2 bay leaves
  • 1 tablespoon Dijon mustard
  • Salt and black pepper to taste
  • Oil for searing
  • Soft pretzel buns or white buns for serving

Instructions

  1. Slice the onions thinly (about 1/4-inch thick) and set aside.
  2. Heat a large skillet or Dutch oven over medium-high heat with a little oil. Sear the bratwurst for 2-3 minutes per side until a deep brown crust forms. Remove brats to a plate.
  3. Reduce heat to medium-low. Add butter to the same skillet. Add onions and a pinch of salt. Cook for about 20 minutes, stirring occasionally, until deep golden brown and jammy.
  4. In a saucepan, combine beer, garlic, caraway seeds, fennel seeds, mustard seeds, bay leaves, and Dijon mustard. Bring to a simmer.
  5. Return seared brats to the skillet with onions. Pour the beer mixture over everything so liquid comes halfway up the brats. Cover and simmer on low for 15 minutes.
  6. Uncover and let liquid reduce for 3-5 minutes. Turn heat to medium-high and sear brats again for 1-2 minutes per side to crisp up.
  7. Let brats rest for 2-3 minutes before serving. Serve on buns topped with caramelized onions and pan sauce.

Notes

Do not pierce the sausages with a fork, as this releases juices and leads to dry brats. Use tongs to flip. Caramelize onions low and slow to avoid burning. If using non-alcoholic version, substitute beer with beef broth and a splash of apple cider vinegar. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
