  • 3 large yellow onions, sliced into half-moons (about 450g)
  • 1 large jar or 2 cans sauerkraut (about 30 oz / 850g total)
  • 1 bottle or can German-style lager, Helles, or Pilsner (12 oz / 355ml)
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons mustard (Dijon or whole-grain)
  • 1 teaspoon caraway seeds
  • 2 dried bay leaves
  • 1 tablespoon brown sugar
  • Salt and black pepper to taste
  • Optional: 1 large Granny Smith apple, diced
  • Optional: 4-5 juniper berries, crushed

Instructions

  1. Slice onions into half-moons, mince garlic, and drain sauerkraut. Have beer, mustard, and brown sugar measured.
  2. Heat a large skillet or Dutch oven over medium-high heat. Brown bratwurst for 2-3 minutes per side until deeply charred. Remove to a plate.
  3. Reduce heat to medium. Add butter and onions to the pan. Cook slowly until golden brown and caramelized (10-12 minutes), scraping up brown bits.
  4. Add garlic and caraway seeds to onions; cook for 30 seconds until fragrant.
  5. Add sauerkraut to the pan. Pour in beer, scraping the bottom to release fond. Add brown sugar, bay leaves, and mustard. Stir to combine.
  6. Return brats to the pan, nestling them into the mixture. Bring to a simmer, then reduce heat to medium-low. Cover and simmer for 15-20 minutes.
  7. Remove lid and increase heat to medium. Simmer uncovered for 5-10 minutes until the sauce reduces and thickens.
  8. Remove bay leaves. Taste and adjust seasoning with salt or sugar if needed. Serve immediately with extra sauce.

Notes

Do not skip browning the brats for flavor depth. Ensure sauerkraut is drained well to prevent a watery sauce. Let brats rest for 5 minutes after cooking to retain juices. This dish tastes even better the next day as flavors meld.
