A tangy, savory German potato salad made with warm Yukon Gold potatoes, crispy bacon, and a vinegar-based dressing. It’s a quick, pantry-friendly side dish that tastes better the next day.

- 2 pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes
- 8 ounces thick-cut bacon, chopped
- 1 medium yellow onion, diced
- 1/2 cup apple cider vinegar
- 1/2 cup low-sodium chicken broth
- 2 tablespoons yellow mustard
- 2 teaspoons granulated sugar
- 1/2 teaspoon ground cumin
- Kosher salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped (optional)
- 2 hard-boiled eggs, sliced (optional)
Instructions
- Wash and peel potatoes, then cut into uniform 1-inch cubes. Place in a large pot and cover with cold water by an inch.
- Add a generous pinch of salt to the water. Bring to a boil, then reduce to a simmer. Cook for 10-12 minutes until fork-tender but holding shape. Drain and let steam dry for a minute.
- While potatoes cook, heat a large skillet over medium heat. Add chopped bacon and cook until crispy. Remove bacon with a slotted spoon, leaving the rendered fat in the pan.
- Reduce heat to medium-low. Add diced onion to the bacon fat and sauté for 2-3 minutes until softened.
- Add apple cider vinegar, chicken broth, mustard, sugar, and cumin to the skillet. Stir to combine and simmer for 2-3 minutes until slightly reduced.
- Remove skillet from heat. Immediately pour the hot dressing over the warm potatoes. Toss gently to coat.
- Sprinkle the crispy bacon back in and fold it in. Taste and adjust salt and pepper if needed.
- Serve warm or at room temperature. Garnish with fresh parsley if desired.
Notes
Use warm potatoes to help them absorb the dressing. Do not overcook the potatoes or they will become mushy. The salad tastes better the next day as flavors meld. It does not freeze well; store in the fridge for up to 4 days. For a vegetarian version, swap bacon for smoked paprika/olive oil and use vegetable broth.
