- 3 medium ripe bananas (about 1 ½ cups mashed)
- ½ cup (115g) unsalted butter, melted
- ¾ cup (150g) sugar (white or brown)
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 ½ cups (190g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup (170g) semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper and lightly grease.
- In a large mixing bowl, mash the ripe bananas with a fork until smooth.
- Add the melted butter, sugar, egg, and vanilla extract to the bananas. Whisk until well combined and smooth.
- Sprinkle the flour, baking soda, and salt over the wet mixture. Gently fold in the dry ingredients until just combined; do not overmix.
- Stir in the chocolate chips.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
- Let the bread cool in the pan for 10 minutes, then lift out using the parchment overhang and cool completely on a wire rack.
Notes
Use very ripe bananas with black spots for the best flavor. Do not overmix the batter once flour is added to avoid a dense texture. If the top browns too quickly, cover loosely with foil. Can be frozen for up to 3 months.
