Description
A refreshing, non-alcoholic holiday drink combining tart pomegranate juice, sweet honey syrup, and sparkling soda. This visually stunning spritzer is perfect for Rosh Hashanah celebrations, offering a balance of sweetness and fizz that is easy to make ahead.
Ingredients
- 1 cup (240ml) 100% pure pomegranate juice
- ½ cup (120g) raw honey
- 2 tablespoons (30ml) fresh lemon juice
- ½ cup (120ml) water
- 4 cups (1 liter) club soda or sparkling water, chilled
- Ice cubes
- Pomegranate arils (seeds) for garnish
- Fresh mint or rosemary sprigs for garnish (optional)
Instructions
- In a medium saucepan, combine pomegranate juice and honey over medium heat.
- Stir constantly with a whisk until the honey is completely dissolved (about 3-5 minutes). Do not let it boil vigorously.
- Remove from heat and stir in fresh lemon juice.
- Transfer the syrup to a bowl or leave in the pan and let it cool to room temperature. For faster cooling, refrigerate for 20 minutes.
- Once cooled, cover and store in the fridge until ready to use (can be made up to a week in advance).
- To assemble, fill a large pitcher with ice.
- Pour the honey-pomegranate syrup over the ice.
- Top with chilled club soda and stir gently to combine.
- Garnish glasses with pomegranate seeds and mint or rosemary.
- Serve immediately to preserve carbonation.
