  • 2 pounds beef tips (chuck steak tips or sirloin tips)
  • 6 tablespoons unsalted butter
  • 8 cloves garlic, minced (about 2 tablespoons)
  • 1 ½ cups low-sodium beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 medium yellow onion, diced (about 150g)
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)
  • 8 oz mushrooms, sliced (optional)
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Dice the onion and mince the garlic. Slice mushrooms if using. Measure out beef broth, Worcestershire sauce, and butter.
  2. Heat a large skillet over medium-high heat and add 2 tablespoons butter. Sear beef tips in batches for 2-3 minutes per side until browned. Transfer to slow cooker.
  3. In the same skillet, add remaining butter and cook onions until translucent and slightly golden, about 3 minutes. Add garlic and cook 1 minute. Add mushrooms if using and cook until browned.
  4. Pour beef broth and Worcestershire sauce into skillet, scrape browned bits, and simmer 1-2 minutes. Pour mixture over beef tips in slow cooker.
  5. Cover and cook on low for 4-6 hours or high for 2-3 hours until beef is fork-tender.
  6. Taste and season with salt and pepper. Stir in fresh parsley if desired.
  7. Serve over mashed potatoes, egg noodles, or creamy polenta.

Notes

Searing the beef adds depth of flavor but can be skipped to save time. Use real unsalted butter for best sauce quality. If sauce is too thin, thicken with cornstarch slurry and cook on high for 15 minutes. Leftovers reheat well with a splash of broth. Freezing is possible but sauce may separate; reheat slowly and stir.
