A budget-friendly, set-it-and-forget-it slow cooker recipe for tender chicken in a sticky honey garlic sesame glaze, perfect for solo meals or meal prep.

- 1 large boneless, skinless chicken breast (about 1.5 lbs / 680g)
- 1/4 cup chicken broth (low sodium)
- 1/4 cup honey
- 3 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 4 cloves fresh garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
- 1 teaspoon sesame seeds (for garnish)
Instructions
- Rinse and pat dry the chicken breast. If thick, pound slightly to ensure even cooking. Place in the bottom of a small slow cooker.
- In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, grated ginger, and sesame oil until mostly dissolved.
- Pour the sauce mixture over the chicken, coating it evenly. Flip the chicken once to cover both sides.
- Cover and cook on LOW for 4 to 5 hours, until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C).
- If a thicker glaze is desired, mix cornstarch and water in a small bowl. Stir into the slow cooker during the last 5-10 minutes of cooking on HIGH or LOW until the sauce thickens.
- Turn off the slow cooker, sprinkle with sesame seeds, and let rest for 2 minutes before serving.
Notes
Chicken breast can turn dry if overcooked; 4 hours is usually perfect. For a spicy version, add red pepper flakes or sriracha. Ginger can be frozen and grated while frozen for easier prep. Leftover sauce can be used as a dip or drizzle. If using a large slow cooker, consider doubling the recipe to prevent drying out.
